Gluten Free Carrot Cake

Hey all,
So today was Easter, as all of you know, and typically with Easter there is family and lots and lots of sweets. This can be hard for those with gluten allergy's because they can't have cakes or cookies, but this year was different. My mom met someone who bakes and does preserves in our community and we had Gluten free carrot cake. I did not eat any because it had walnuts in it, but it was a big hit and everyone seemed to love it.
We also had a huge ham, that was amazing. We got it at a local smokehouse, it was sooo good and gluten free.
So today in the my household all was right, my mom practically jumped with joy at the gluten free carrot cake (which was also soy free just fyi). Today was a great Easter, with lots of family fun.

Gluten Free Pancakes

Hey All people who actually read this,
Tonight was breakfast for dinner night, and we had gluten free pancakes and bacon. It was amazingly good. The pancakes actually tasted like regular pancakes, they were AMAZING! It's made by Kinnikinnick foods, I totally recommend it, it's worth it.
Today was not all great, lunch was hard because we ate out at a place with not much selection for my mom. But I think the amazing breakfast for dinner made up for it.

Hello Everyone

Hey All,
I decided to create this blog to help those who live with people with gluten sensitivity. Because after all they are not the only ones who have to change their lives.
Your whole life changes too, my mom was diagnosed with Gluten sensitivity 2 years ago and our whole house-hold life changed. I am going to list my experiences with Gluten free food and hopefully in turn help you all.
